Bulgarian supermarkets and markets with their abundance of fruits and vegetables are a real paradise for any gourmet. Given the low cost, vitamins can be recharged for a whole year. In terms of quality, products here can get a very high rating, especially seasonal local products.

A key place in Bulgaria is occupied by dairy and sour-milk products.
"Kiselo mlyako" is a completely unique dish, which in its original form is only available in Bulgaria. The impossibility of its production outside the homeland is justified by the fact that the bacteria Lactobacillus bulgaricus Streptococcus thermophilus “live” exclusively on Bulgarian soil and are not able to adapt to other territories. Kiselo Mlyako resembles natural yogurt, has a homogeneous structure, a mild sour-milk flavor, has powerful antimicrobial properties and an immunostimulating effect.
Very often the concepts of "brynza" and "siren" are confused. They differ not only in taste, texture and scope, but also in production technology. For foreigners, this fine line is hard to understand until you get to personally try both options. Bulgarian cheese is relatively crumbly and is made from cow's, goat's or sheep's milk. The fat content of the product is not more than 50%. If sirene is used in almost all dishes as a self-sufficient product, then cheese is a filling for pancakes, banitsa, and pies.
"Bosa" is a fermented drink made from cereals (rye, wheat, corn, oats or mixtures), slightly sweetened, with a minimum alcohol content (up to 0.5%). Rich in carbohydrates, proteins, B vitamins, minerals and amino acids. It has a complex tonic effect, but at the same time very nutritious, it may well replace a full meal. Bulgarians drink it with great pleasure, but others usually does not really like the taste of the drink.
One of the most popular traditional types of Bulgarian pastries. "Banitsa" is prepared with any filling - meat, minced meat, vegetables, fruits, cheese. The basis of this Bulgarian dish is a special dough, which is made from flour (wheat), yogurt (sour milk), butter and water, salt and soda. The ingredients are mixed, infused for about an hour, thoroughly mixed. The dough is rolled out into thin cakes, after which it is fertilized with a filling, twisted and cooked in a pan or in the oven. You can buy ready-made dough in most supermarkets.
"Lutenitsa" is made from roasted peppers, tomatoes, carrots, and garlic. It is used as an independent product, with bread, as a sauce for main dishes. Every year, at the beginning of autumn, an incredible aroma of baked pepper spreads throughout the country - it is the Bulgarians who are preparing for winter and bake bell peppers in special devices “chushkopek” (chushka - translated from Bulgarian as “pepper”), stocking "Lutenitsa" for the whole year.
Mursala tea. Plants are harvested in the Balkan Mountains, at an altitude of at least 1300 meters above sea level and is listed in the Red Book. The finished drink has a mild herbal flavor and numerous beneficial effects - it has a beneficial effect on the genitourinary, cardiovascular, digestive, respiratory, reproductive, nervous systems, blood formation, removes toxins from the body, and strengthens the body. Essential oils of Mursala tea, mineral and organic compounds, flavonoids, as well as a whole "bouquet" of trace elements and vitamins contribute to the rapid recovery of the body after a protracted illness. Mature plants are harvested in June-July, dried and brewed (2-3 tablespoons per liter of water) and taken three times before meals.
Bulgarian cuisine is diverse, amazing, versatile and self-sufficient. National dishes are tasty, fragrant, moderately spicy. The fullness and range of gastronomic sensations is simply impossible to convey in words - you need to try, savor and enjoy.
